Water for a Café and Restaurant: Why It Is an Ingredient, Not a Utility

Why water determines the taste of coffee and the service life of kitchen equipment. The SCA standard in numbers and water treatment schemes for the bar and the kitchen.

Espresso is 90% water. Ice, broth, dough and the steam in a combi oven are also water. If you control the beans and the flour but do not control the water, the largest ingredient on your menu by mass remains unmanaged.

Water as an Ingredient

The taste of coffee is shaped by dissolved substances. Calcium and magnesium help extract flavor compounds from the beans. Alkalinity, which is mainly bicarbonates, works as a buffer and dampens the acidity of the drink. Water that is too soft produces flat coffee with sharp acidity. Water that is too alkaline produces dull, "chalky" coffee.

The Specialty Coffee Association publishes a standard for brewing water. The figures are as follows.

  • Total dissolved solids: target 150 mg/L, range 75–250 mg/L.
  • Calcium hardness: target 68 mg/L as CaCO₃, range 17–85 mg/L.
  • Total alkalinity: about 40 mg/L as CaCO₃.
  • pH: target 7.0, range 6.5–7.5.
  • Sodium: about 10 mg/L.
  • Total chlorine: 0 mg/L.
  • Odor and color: clean water with no odor.

Note the calcium hardness. The upper limit of 85 mg/L as CaCO₃ is about 1.7 °Zh. Tap water in Tashkent does not fall within this range.

What Water Does to Equipment

When heated, calcium bicarbonate decomposes and precipitates. This is how scale forms. WHO states explicitly that hard water produces deposits in distribution systems and in water heating equipment, coating surfaces and reducing the efficiency of heat exchangers.

What follows is simple physics. A layer of scale has a thermal conductivity tens of times lower than steel or copper. The heating element has to run hotter to deliver the same power into the water. Element coil temperature rises, electricity consumption rises, and service life falls.

Each appliance suffers in its own way.

  • Espresso machine. Scale settles on the heating element, the heat exchanger and in the group head. The temperature profile of the shot changes, the taste drifts, and valves stick.
  • Combi oven. The water in the steam generator evaporates completely. All the salts remain inside. This is the fastest-scaling point in the kitchen.
  • Ice maker. Ice freezes in layers, and salts are pushed out into the residual brine. The ice comes out cloudy, and the evaporator becomes coated.
  • Dishwasher. Carbonates and silicates leave white streaks on glassware and cutlery. Neither temperature nor chemicals remove them.

Different Points, Different Water

A single common water treatment point for the whole facility is rarely optimal. The tasks of the bar and the kitchen are different.

For boiler-type equipment and the dishwasher, there is one task: prevent scale from precipitating. An ion exchange water softener works here. It removes calcium and magnesium and does not affect the total dissolved solids.

For coffee, the task is harder. It is not enough to remove hardness; the water must be brought to the SCA target profile. A water softener alone cannot do this, because sodium does the coffee no good and alkalinity remains high. A working scheme is reverse osmosis followed by remineralization or blending with raw water in a set proportion. This gives you both the required TDS and the required alkalinity.

Chlorine deserves separate mention. The standard requires zero. This means the scheme needs a carbon stage ahead of the dispensing point.

How to Build the Scheme

The sequence of steps is the same regardless of the size of the establishment.

  • Have the water analyzed at the actual address. Minimum: total and calcium hardness, alkalinity, dry residue, iron, turbidity, chlorine, pH.
  • Draw up a list of water consumers with their flow rates. Espresso machine, combi oven, ice maker, dishwasher, filter coffee brewer, tea station.
  • Install mechanical pre-filtration at the inlet. It protects everything downstream.
  • Separate the lines. A process line for softening, a bar line for reverse osmosis and remineralization.
  • Provide sampling points and pressure gauges before and after the filters. Without them you will not see when a cartridge is spent.

Monitoring and Maintenance Schedule

Water treatment degrades unnoticed. Until it starts flooding the floor or the pressure drops, no one thinks about it. Introduce a simple schedule.

  • Weekly: check the pressure drop across the pre-filters.
  • Monthly: measure hardness at the water softener outlet with a test kit, check the salt level.
  • Quarterly: measure TDS on the bar line.
  • Per the manufacturer's service life: replace cartridges, membranes and carbon.

Record the readings. After six months, these records will show exactly when to replace consumables on your water, rather than by the average interval in the data sheet.

What this means for a project in Tashkent

  • In approximately 85% of the city and in all regions of the republic, the water is hard and of low quality. When opening an establishment, assume that water treatment is needed, not that it might be needed.
  • Even in the few districts where the raw water quality is acceptable, old central mains bring iron and suspended solids. A mechanical stage at the inlet is mandatory in any case.
  • The warranty on professional coffee and steam equipment is often tied to the quality of the feed water. Keep the analysis and the filter maintenance log.
  • Treat water treatment as part of the cost of a drink, not a one-time line in the renovation budget. Consumables and salt are a monthly item.
